Better Than Take-Out: Make Your Own Pad Thai and Summer Rolls

Pad Thai is one of the most popular Thai dishes in the United States. This delicious, stir-fried rice noodle dish has its origins as a street food in Thailand, but elevated versions of it are served throughout the country's restaurants. It is an integral part of Thailand's culture and culinary history, typically made with rice noodles, chicken, beef or tofu, peanuts, scrambled egg, bean sprouts, and vegetables. We will also make fresh Summer Rolls. Unlike Spring Rolls, Summer Rolls are lighter and healthier and serve as the perfect appetizer.

We provide the ingredients, instruction, and the kitchen classroom to prepare your recipe that you can enjoy in class and/or take home. You'll also learn knife skills and all the practical cooking skills that go into creating this classic dish.

Instructor Wally Rande is both a culinary school graduate and a culinary school chef instructor, with over 12 years of experience managing commercial kitchens and working as a chef in restaurants. He has taught for over 30 years in the renowned School of Hotel & Restaurant Management at Northern Arizona University. As an Associate Professor he has developed and taught classes in management, leadership, customer service, tourism, human resources, cooking, and beverages. He has multiple degrees in Educational Leadership, an MBA, Hospitality Business and Culinary Arts. He has also certifications as a Level 1 Wine Sommelier, and Level 1 Beer Cicerone.
